Excellent study gentlemen! QQQ- Some ppl we know who were farmers told us that what most refer to as blood in red meat (raw) is a misconception. Rather, it is water mixed w/”Myoglobin”, a protein highly pigmented (red). If this is the case, would it still be necessary to let it sit in salt water until it runs clear? Thank you!
If I may make a correction…The actual word we were told for this was “MYOCIN”, which too is a protein.
